Good afternoon readers, I feel like I’ve been gone for a while. Well, I know I’ve been gone for a while, but it’s so hard to get back into the swing of things BUT i am back so prepare to be drowned in recipes 🙂 I made this insanely good chicken wrap I’m sure you’ll love it as you can susbstitue the chicken for absoluetly anything.

Recipe

Ingredients:

2 large chicken breast ( cubed )

2 cloves of garlic

Zest of 1 lemon

1/2 tsp ground cumin

1/4 tsp coriander

1/4 paprika

Pinch of salt&pepper

Arugula greens ( whatever green leafs you feel like )

Sliced tomatoes

4 wraps * store bought or home made , see recipe below *

Spicy garlic sauce * recipe below*


 

Preparation:

1. Place cubed chicken into bowl , and drizzle in about 2 tablespoons of olive oil; add the garlic and the remainder of ingredients up till the salt & pepper. Using your HANDS *important to get the flavour rubbed right in* Don’t be shy 😉 rub spices into chicken.

2. Using  bamboo skewers , skewer the chicken equally an leave to marinate  20 mins minimum.

3. when ready to grill , heat up a grill pan OR grill on the bbq grill. Drizzle in a little oil; once the pan gets hot , place the chicken skewers into the pan and cook for about 7-8mins turning them occasionally making sure they get bit charred on all sides. Cover and set aside.

SPICY GARLIC SAUCE:

1/2 cup of mayonnaise

1/2 plain yogurt

4 cloves of garlic crushed

1 tablespoon of tahini

1/2 teaspoon

1 tablespoon of ketchup

pinch of salt & pepper

1. Easy peasy mix all ingredients together!

Assembling the wrap

  • Add a little drizzle of the spicy garlic sauce on to the wraps , followed by the greens , add a couple slices of tomato and about one skewer of the chicken ; drizzle a generous  amount of the spicy sauce, and fold the sides towards the middle to from a wrap””

 

* Tip* you can use foil to hold it all together if you like*

Quick and easy wrap recipe : Makes about 16 * which you can freeze in an airtight container.

3 cups flour

1 tsp salt

1 tsp baking powder

1/3 cup vegetable oil

1 cup warm water

Thoroughly mix all dry ingredients , then add the vegetable oil and warm water need dough for 6-8 minutes until springs back when poked.

Transfer dough to a well floured surface and divide dough until you get approximately 16 portions. shape each portion into a ball then gently , using the palm of your hand flatten out the dough.

Heat an nonstick pan over a medium high heat . Roll each piece into a circle with a lightly floured  rolling pin.

When the pan is hot, place one ought circle and let cook for 1 minute or until the surface of the dough starts to bubble then flip and cook other side but for slightly less time 30 seconds should do .  Repeat .
